Fresh aromas of green apple, peach and clementine are complimented on the palate by a refreshing seam of natural acidity, flavours of lemon drops, and a long finish.
Selected for our sparkling wine early in the growing season from a single vineyard block. Picked under cool conditions early in the harvest to help retain the fantastic acidity in Riesling from Niagara. Only the free run juice was fermented at cold temperatures using a neutral yeast strain, in stainless steel, then aged at cool temperatures for three months on very light lees. Produced using the Charmat Method and bottled under pressure from the secondary fermentation in stainless steel.
